पहला नियम

जहाँ बिकता है, ज़रूरी नहीं वहीं उगता हो

Khari Baoli में आपको हर dry fruit मिल जाएगा, पर उनमें से ज़्यादातर Delhi से सैकड़ों किलोमीटर दूर उगते हैं, और कई तो India के बाहर। हर product की चार अलग जगहें होती हैं, और अक्सर चारों अलग-अलग शहरों में होती हैं।

Origin

जहाँ फसल उगती है। कभी Maharashtra का गाँव, कभी California का farm।

Processing hub

जहाँ shelling, drying, grading और packing होती है। Kaju के लिए Kollam।

Wholesale market

जहाँ trade होता है और भाव बनते हैं। Delhi की Khari Baoli, Mumbai।

India में cashew की खेती भी बड़ी है और processing भी। Processing units को साल भर चलाने के लिए India shell वाले raw cashew nuts बड़ी मात्रा में import भी करता है।

Kollam लंबे समय से India के सबसे important cashew-processing centres में रहा है। Shelling, peeling, grading, packing और export, सब यहीं होता है।

Common grades हैं W180, W210, W240, W320, W450, splits और pieces (broken kernels)। इनमें W320 सबसे ज़्यादा चलने वाले mainstream grades में से एक है।

Raisins / Kishmish

Tasgaon सिर्फ़ एक मंडी नहीं है। अंगूर की खेती, raisin drying, grading, packing, cold storage और auction, सब इसी इलाके में होते हैं। इसीलिए source से सीधे खरीदने का सबसे अच्छा मौका यहीं है।

Grading और packing से पहले kishmish को आमतौर पर 14-16% moisture तक सुखाया जाता है। Supplier से lot की moisture ज़रूर पूछिए।

Belt: Purnia, Katihar, Madhubani, Darbhanga, Supaul, Saharsa, Araria, Kishanganj और बाकी North Bihar

Makhana में Bihar सबसे आगे है। Darbhanga का नाम सबसे पहले आता है और इसकी history भी गहरी है, पर उसे अपने-आप India का सबसे बड़ा production centre मान लेना गलत होगा। सरकारी district-level data में Purnia और Katihar का production Darbhanga से ज़्यादा दिखता है।
